Old-Fashioned Sweet Macaroni Salad

A classic, creamy macaroni salad with a sweet and tangy flavor, perfect for picnics and barbecues.

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup sugar
  • 1/4 cup apple cider vinegar
  • 1/2 cup diced bell pepper (any color)
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/2 cup sweet pickles, diced
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine mayonnaise, sugar, and apple cider vinegar, whisking until smooth.
  3. Add the cooled macaroni to the dressing and mix well.
  4. Stir in diced bell pepper, celery, red onion, and sweet pickles.
  5. Season with salt and pepper to taste.
  6. Cover and chill in the refrigerator for at least 1 hour before serving.
