No-Bake Cranberry Cheese Balls

  • 4 oz goat cheese, softened
  • 1/2 cup dried cranberries, finely chopped
  • 1/2 cup pecans, finely chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Cheese Mixture: Soften cream cheese and goat cheese for about 30 minutes, then mix in a bowl until smooth.
  2. Add Cranberries and Pecans: Add chopped cranberries, pecans, honey, vanilla extract, and salt to the cheese mixture and combine.
  3. Chill the Mixture: Cover and refrigerate the mixture for 1 hour.
  4. Shape the Cheese Balls: Roll the chilled mixture into 1-inch balls using clean hands.
  5. Coat the Cheese Balls: Optional – roll the balls in extra chopped pecans.
