Mozzarella-Stuffed Spinach Garlic Meatballs

Delicious and nutritious meatballs filled with gooey mozzarella and flavored with fresh spinach and garlic.

  • 1 lb ground beef
  • 1 cup fresh spinach, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1 cup mozzarella cheese, cut into small cubes
  • 2 tbsp olive oil (for cooking)

Instructions

  1. In a large mixing bowl, combine ground beef, finely chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, black pepper, and Italian seasoning. Mix thoroughly.
  2. Shape the mixture into meatballs, encasing a cube of mozzarella cheese in the center of each.
  3. Heat olive oil in a skillet over medium heat and cook the meatballs for 6-8 minutes, turning occasionally until browned and cooked through.

Notes

For best results, use 80% lean ground beef and make sure to keep the cheese cold until ready to use. You can also bake the meatballs at 400°F for 20-25 minutes if preferred.
