Moist Pineapple Juice Cake

A moist and delicious cake made with pineapple juice, perfect for dessert or a sweet snack.

  • 1 cup Pineapple Juice
  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 3 large Eggs
  • 2 teaspoons Baking Powder
  • 1/2 cup Vegetable Oil
  • 1 cup Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13 inch baking pan.
  3. In a large bowl, mix together the flour and baking powder.
  4. In another bowl, whisk together the granulated sugar and vegetable oil until well blended. Add the eggs and pineapple juice, and beat until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  9. Prepare the glaze by mixing powdered sugar with pineapple juice until pourable.
  10. Once cooled, drizzle the glaze over the cake.

Notes

Store in an airtight container to maintain moisture. Cake lasts 3-5 days at room temperature and up to a week in the fridge.
