Mini Antipasto Skewers

A vibrant and flavorful appetizer featuring tortellini, cheeses, olives, and veggies, perfect for parties and gatherings.

Ingredients

  • 9 oz Tortellini (cooked al dente)
  • 8 oz Ciliegine (or cubed fresh mozzarella)
  • 1 cup Cherry Tomatoes (multi-colored)
  • 1 cup Castelvetrano Olives (any pitted olives)
  • 1 cup Cornichons (or pickled onions)
  • 4 tbsp Pesto (store-bought or homemade)
  • 2 tsp White Balsamic Vinegar
  • 1 tbsp Olive Oil
  • Rosemary Sprigs (for garnish)

Instructions

  1. Cook tortellini according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked tortellini, olive oil, white balsamic vinegar, and pesto. Toss gently until coated.
  3. Prepare skewers by threading ingredients, starting with a cherry tomato, followed by a tortellini, ciliegine, cornichon, and ending with an olive. Repeat until filled.
  4. Arrange assembled skewers on a platter and garnish with rosemary sprigs.

Notes

Serve fresh for best flavor. Best enjoyed within 2 days of preparation.
