  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • 1 package cheese ravioli

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat and sear chicken breasts for 5-7 minutes per side until golden brown. Remove and keep warm.
  3. In the same skillet, lower heat and add sun-dried tomatoes, cooking for a minute. Mix in garlic powder, onion powder, and Italian seasoning. Stir and cook for another minute.
  4. Pour in heavy cream and let the sauce simmer for a few minutes, then add grated Parmesan, stirring until melted.
  5. Add fresh spinach to the sauce, stirring gently until wilted.
  6. Cook the cheese ravioli according to package instructions and set aside.
  7. Return seared chicken to skillet, spoon sauce over it, and gently fold in the cooked ravioli.
  8. Serve immediately, garnished with additional Parmesan or fresh herbs if desired.

Notes

For a dairy-free alternative, use coconut cream and omit the Parmesan. Consider using gluten-free ravioli if needed.
