Maple Glazed Apple and Brie Stuffed Chicken

  • 4 pieces boneless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 piece honeycrisp apple, sliced thin
  • 4 ounces brie cheese, sliced thin
  • 1 cup apple cider or apple juice
  • 2 tablespoons pure maple syrup
  • ½ tablespoon minced garlic (about 2 cloves)
  • 1 teaspoon dijon mustard
  • 2 teaspoons fresh thyme, removed from stems
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut a pocket into each chicken breast without cutting all the way through.
  3. Sprinkle the inside and outside of each chicken breast with kosher salt and black pepper.
  4. In a small bowl, mix the sliced honeycrisp apple with sliced brie.
  5. Stuff the apple and brie mixture inside each chicken breast pocket, securing openings with toothpicks if needed.
  6. In a small saucepan, combine apple cider, maple syrup, minced garlic, dijon mustard, fresh thyme, and kosher salt; heat until simmering, then reduce heat and cook for 5 minutes.
  7. Heat oil in an oven-safe skillet over medium-high heat; sear stuffed chicken breasts for 3-4 minutes on each side until browned.
  8. Pour the maple glaze over the chicken in the skillet.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches 165°F (74°C).
  10. Let the chicken rest for a few minutes before serving.

Notes

Serve with sides like roasted vegetables, mashed potatoes, or green salad. Store leftovers in an airtight container for 3-4 days in the refrigerator.
