  • 2 tbsp active dry yeast
  • 1/2 cup unsalted butter (melted and cooled)
  • 2 large eggs (room temperature)
  • 1 tsp salt
  • 4 1/2 cups all-purpose flour (spooned and leveled)
  • 1/3 cup unsalted butter (softened)
  • 1 tbsp honey
  • 1 tsp fresh rosemary (finely chopped)
  • 1/4 cup unsalted butter (for glazing)
  • 2 tbsp honey (for drizzling)
  • 1 tsp fresh rosemary (finely chopped)

Instructions

  1. Activate the yeast by mixing warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Mix flour and salt in a separate bowl.
  3. Combine the wet ingredients: add melted butter, eggs, and salt to the yeast mixture.
  4. Gradually incorporate the flour mixture into the wet mixture until dough forms.
  5. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  6. Let the dough rise in a greased bowl for 1-2 hours until doubled in size.
  7. Punch down the dough and shape into 12-16 balls, placing them in a greased baking dish.
  8. Cover and allow to rise for another 30-45 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake the rolls for 15-20 minutes until golden brown.
  11. While baking, prepare rosemary honey butter by mixing softened butter, honey, and rosemary.
  12. Brush the hot rolls with melted butter and drizzle with honey, then sprinkle with rosemary.
  13. Cool slightly and serve warm or at room temperature.
