Luscious Carrot Bars

Delightful carrot bars combining natural sweetness and warm spices, topped with creamy maple frosting.

  • 1 cup finely grated carrots
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/4 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of ground cinnamon for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×9 inch baking dish.
  2. In a large mixing bowl, combine melted butter and brown sugar; add egg and vanilla, mixing until smooth.
  3. In a separate bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to the wet mixture, stirring gently until combined.
  5. Fold in grated carrots and pour the batter into the prepared baking dish.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. For frosting, beat butter and cream cheese until fluffy; add powdered sugar, maple syrup, and vanilla, mixing until smooth.
  8. Spread frosting on cooled bars, garnish with cinnamon, cut into squares, and serve.

Notes

Store in an airtight container for up to 3 days at room temperature or refrigerate for a week. For longer storage, freeze individually wrapped bars for up to 3 months.
