1 lb ground beef
1 can diced tomatoes
1 can black beans
1 packet taco seasoning
1 cup corn (frozen or fresh)
3 cups chicken or vegetable broth
Toppings: Cheese, sour cream, avocado, cilantro
Brown the Meat: In a large pot over medium heat, add the ground beef. Cook until browned, stirring frequently to break up the meat. Drain excess grease.
Add the Vegetables: Stir in diced onions and any other chopped veggies. Sauté for about 5 minutes until they start to soften.
Add the Rest of Ingredients: Pour in the diced tomatoes, black beans, corn, and broth. Stir well to combine.
Season: Add the taco seasoning and stir to incorporate fully. Bring the soup to a gentle boil, then reduce to a simmer.
Simmer: Let the soup simmer for at least 20 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
Taste and Adjust: Taste your soup and adjust the seasoning as necessary. Add salt, pepper, or more seasoning to your liking.
Serve: Ladle the soup into bowls and top with cheese, sour cream, avocado, or your favorite toppings. Enjoy!
