1 lb ground beef
1 cup diced onions
1 cup diced carrots
4 cups beef broth
2 cups diced potatoes
1 cup shredded cheddar cheese
1 cup milk (or cream)
Your favorite burger toppings (bacon, pickles, green onions, etc.)
Brown the beef: In a large pot over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Make sure to break it up into smaller pieces.
Add vegetables: Stir in diced onions, carrots, and any other vegetables you are using. Cook for another 5 minutes until the veggies are slightly tender.
Pour in broth: Add the beef broth and bring to a boil. Once boiling, lower the heat to a simmer.
Include potatoes: Add diced potatoes to the pot and continue to simmer for about 10-15 minutes, or until the potatoes are tender.
Melt in cheese: Stir in the shredded cheddar cheese and milk, allowing it to melt and thicken the soup.
Season to taste: Add salt, pepper, and any additional spices you like to balance the flavors.
Serve hot: Ladle the soup into bowls and top with your favorite burger toppings, like crispy bacon or green onions.
