A delicious and comforting Loaded Baked Potato Soup that’s rich and creamy, perfect for chilly evenings.

  • 2 cups mashed potatoes
  • 4 cups chicken or vegetable broth
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1 cup cooked bacon, crumbled
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the 2 cups of mashed potatoes and 4 cups of chicken or vegetable broth.
  2. Stir the mixture until well blended and heat over medium heat, stirring occasionally to avoid sticking.
  3. Once heated through, add the 1 cup of shredded sharp cheddar cheese and 1/2 cup of sour cream. Mix until the cheese is melted and well combined.
  4. Incorporate the 1 cup of crumbled bacon and stir well.
