Lemon Butter Garlic Chicken Thighs

A quick and easy recipe for juicy chicken thighs with a bright lemon and garlic flavor, perfect for any occasion.

  • 4 chicken thighs
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Season the chicken thighs with salt and pepper, rubbing the seasoning into the meat.
  2. Turn on the Instant Pot to the sauté function and add the butter to melt.
  3. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Place the seasoned chicken thighs in the pot and sear for 3 to 4 minutes on each side until golden brown.
  5. Pour in the lemon juice and chicken broth, mixing to combine.
  6. Close the Instant Pot lid, ensuring it’s sealed, and cook on high pressure for 10 minutes.
  7. After 10 minutes, allow pressure to release naturally for 5 minutes, then perform a quick release.
  8. Remove chicken and optionally thicken the sauce by sautéing it again for a few minutes. Garnish with fresh parsley and serve.

Notes

Use fresh garlic for the best flavor. Consider marinating the chicken for added taste.
