  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken thighs with salt, black pepper, and Italian seasoning.
  2. Set the Instant Pot to sauté mode, add butter, and let it melt.
  3. Place the chicken thighs in the pot, skin-side down, and sear for 5 minutes until golden brown.
  4. Flip the chicken thighs and add the minced garlic. Sauté for an additional minute.
  5. Pour in the chicken broth and the juice and zest of the lemon.
  6. Close the lid, set the valve to sealing, and pressure cook on high for 10 minutes.
  7. Perform a quick release of pressure.
  8. Remove the chicken and let it rest for a few minutes.
  9. Optional: Sauté the remaining liquid to thicken the sauce.
  10. Serve topped with garlic butter sauce and garnish with fresh parsley.
