Lamb with Mint and Pistachio Gremolata

A tender lamb dish paired with a refreshing gremolata made of mint, pistachios, and lemon, perfect for impressing guests or family.

Ingredients

  • 2 racks Lamb Racks
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 1 cup Fresh Mint Leaves
  • 1/4 cup Fresh Italian Parsley
  • 1/2 cup Pistachio Nuts
  • 2 cloves Garlic Cloves
  • 1/4 cup Olive Oil
  • to taste Salt
  • 1/2 cup Pomegranate Seeds

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the lamb racks dry and season with salt, pepper, and smoked paprika.
  3. In a large skillet, heat olive oil and sear the lamb racks for 2-3 minutes on each side.
  4. Transfer the lamb to a baking sheet and roast for 15-20 minutes.
  5. Let the lamb rest for 5-10 minutes.
  6. Prepare the gremolata in a food processor and pulse together mint leaves, parsley, pistachios, garlic, lemon zest, lemon juice, and salt while drizzling in olive oil.
  7. Slice the lamb and serve with gremolata and optional pomegranate seeds.

Notes

Use high-quality lamb for the best flavor. The gremolata can also be used on grilled vegetables.
