Jalapeño Cheddar Tuna Melts

Quick and easy Jalapeño Cheddar Tuna Melts are a protein-packed, cheesy delight with a spicy kick, perfect for any meal.

  • 12-ounce can solid white albacore tuna, drained
  • ⅓ cup mayonnaise
  • ¼ cup green onions, thinly sliced
  • 3 to 4 tablespoons sweet yellow corn (optional)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon yellow mustard
  • 1 tablespoon chopped parsley
  • 1 cup shredded sharp cheddar cheese
  • 1 jalapeño, thinly sliced
  • 4 to 5 slices of your favorite bread

Instructions

  1. Drain the can of tuna and place it in a mixing bowl.
  2. Add mayonnaise, green onions, corn (if using), salt, black pepper, red pepper flakes, yellow mustard, and parsley to the tuna, then mix until well combined.
  3. Preheat the oven or broiler. Spread a thin layer of mayonnaise on one side of each slice of bread.
  4. On half of the bread slices, sprinkle a generous layer of shredded cheddar cheese, then spoon the tuna mixture onto the cheesy slices, and cover with remaining bread, mayonnaise side up.
  5. Place the sandwiches on a baking sheet and broil for about 2-3 minutes, watching to avoid burning, until the cheese is melted and bubbly.
  6. Add sliced jalapeños on top and serve warm.

Notes

For a lighter option, substitute mayonnaise with Greek yogurt or avocado. To reduce spice, use pickled peppers instead of jalapeños.
