Irresistibly Moist Strawberry Bread

A delightful twist on traditional quick breads, this strawberry bread is moist, flavorful, and perfect for breakfast, snacks, or dessert.

  • 1 cup Sugar (or brown sugar)
  • 1 cup Milk (or almond milk)
  • 1/3 cup Oil (or melted butter)
  • 1 large Egg (or flax egg)
  • 1 teaspoon Vanilla (or almond extract)
  • 2 cups All-Purpose Flour (or whole wheat flour)
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Chopped Pecans (or walnuts, or omit)
  • 1 cup Chopped Strawberries
  • 1/2 cup Chopped Strawberries
  • 1 teaspoon Vanilla (or lemon juice)
  • 2 tablespoons Melted Butter (or coconut oil)
  • 1 cup Powdered Sugar (or sugar alternative)
  • 1/4 cup Heavy Cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, mix sugar and oil, then add egg, milk, and vanilla, whisk until smooth.
  4. Pour wet ingredients into dry ingredients, stir until just combined.
  5. Fold in the chopped strawberries and nuts (if using).
  6. Transfer the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve plain or with a sweet glaze of powdered sugar, heavy cream, and melted butter. Best enjoyed warm.
