12 ounces spaghetti
¾ gallon water
1½ tablespoons salt
⅓ cup extra virgin olive oil
3 cloves garlic, grated or minced
3 tablespoons flat-leaf parsley, finely chopped
Instructions
Fill a large pot with ¾ gallon of water, add 1½ tablespoons of salt, and bring it to a rolling boil.
Add 12 ounces of spaghetti to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.
Meanwhile, heat ⅓ cup of extra virgin olive oil in a large skillet over medium heat, then add the grated or minced garlic and sauté for 1-2 minutes until fragrant but not browned.
Reserve 1 cup of pasta cooking water, drain the spaghetti, and add it to the skillet with the garlic and olive oil. Toss to coat.
If needed, add reserved pasta water gradually to adjust the sauce’s consistency.
Add 3 tablespoons of finely chopped parsley, toss gently, and serve hot.
Notes
Serve immediately with optional grated Parmesan cheese or a sprinkle of red pepper flakes for added flavor.
