Cherry Cheesecake Cake Roll

A delightful dessert combining the creamy texture of cheesecake with a light, sponge-like cake roll, perfect for celebrations.

  • 3 large Eggs
  • 3/4 cup Sugar
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 8 oz Cream Cheese
  • 1/2 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup Cherries
  • Powdered Sugar (optional, for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a bowl, beat the eggs and sugar on medium speed for about 5 minutes until thick and pale.
  3. Gently fold in flour, baking powder, and salt until combined.
  4. Pour the batter into the baking sheet and spread evenly.
  5. Bake for 12-15 minutes until lightly golden and springs back when touched.
  6. Cool the cake briefly in the pan before transferring to a powdered sugar-sprinkled towel and rolling it up to cool completely.
  7. In a bowl, beat cream cheese and sugar until smooth, then mix in vanilla extract.
  8. Fold in chopped cherries into the cream cheese mixture.
  9. Unroll the cooled cake, spread cheesecake filling, and roll it back up carefully.
  10. Place seam-side down on a platter and dust with powdered sugar if desired.

Notes

Use room temperature ingredients for better texture. Sift flour for lightness.
