Instant Pot Shredded Beef

A hearty and flavorful dish, perfect for tacos, burritos, or serving over rice.

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil. Add the chopped onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Season the beef chuck roast with salt, pepper, smoked paprika, cumin, and chili powder.
  4. Place the beef in the Instant Pot, pour the beef broth over it, and seal the lid.
  5. Cook on high pressure for 60 minutes.
  6. Once done, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  7. Remove the beef from the pot and shred it with two forks.
  8. Serve with tortillas for tacos or as desired.

Notes

For best results, consider searing the beef before pressure cooking for added flavor.
