Honey Glazed Carrots & Green Beans

A delightful side dish combining the natural sweetness of carrots and green beans with a honey glaze.

Ingredients

  • 1 pound fresh carrots
  • 1 pound fresh green beans
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: Chopped fresh parsley or toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the green beans, snapping off the stem ends.
  3. If using whole carrots, peel and cut them into 1-inch thick pieces on a diagonal.
  4. In a small bowl, whisk together olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper until emulsified.
  5. In a large bowl, toss the carrots and green beans with the honey glaze until evenly coated.
  6. Spread the glazed vegetables in a single layer on a baking sheet.
  7. Roast for 20-25 minutes, checking for tenderness.
  8. For extra caramelization, broil for 1-2 minutes at the end while monitoring closely.
  9. Remove from the oven, let sit for a minute, garnish if desired, and serve.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator.
