Honey Garlic Chicken Stir-Fry

A quick and delicious honey garlic chicken stir-fry that combines tender chicken, crunchy vegetables, and a sweet-and-savory sauce, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken thighs – cut into bite-sized pieces
  • Salt, pepper, and garlic powder – ½ tsp each, for seasoning chicken
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil, divided
  • 1 tsp sesame oil
  • 1 medium zucchini – sliced
  • ½ cup chopped bell pepper
  • ½ white onion – chopped
  • 3 cloves garlic – minced
  • 1 tsp ginger – minced
  • ⅓ cup honey
  • ¼ cup low-sodium soy sauce
  • ¼ cup chicken broth
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ¼ tsp red pepper flakes – optional
  • 1 tbsp cornstarch

Instructions

  1. Prepare and season the chicken: Cut chicken thighs into bite-sized pieces, season with salt, pepper, and garlic powder, and coat with cornstarch.
  2. Make the sauce: Combine honey, soy sauce, chicken broth, rice vinegar, and sesame oil in a bowl and mix until honey is dissolved.
  3. Stir-fry the vegetables: Heat 1 tbsp vegetable oil, add zucchini, bell pepper, and onion, and stir-fry for 3-4 minutes. Add garlic and ginger, and stir for another minute.
  4. Cook the chicken: Add remaining oil to skillet, place chicken in, and cook for 5-7 minutes until golden brown and cooked through.
  5. Add the sauce and vegetables: Mix in the vegetables and pour sauce over the chicken, stirring until well coated. Simmer for 2-3 minutes to thicken sauce.

Notes

For a thicker sauce, mix an additional tablespoon of cornstarch with a little water and add it to the pan. Serve over rice, couscous, or noodles.
