Honey Garlic Butter Roasted Carrots

Delightful roasted carrots glazed with honey, garlic, and herbs, perfect as a nutritious side dish.

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika (optional)
  • 1 teaspoon lemon juice (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and cut the carrots into uniform pieces.
  3. In a small bowl, combine the melted butter, honey, olive oil, garlic, salt, pepper, thyme, and paprika.
  4. Toss the carrots with the honey garlic butter mixture until evenly coated.
  5. Spread the carrots in a single layer on the baking sheet.
  6. Roast for 20–25 minutes, flipping halfway through, until tender and caramelized.
  7. Optional: Drizzle with lemon juice and garnish with parsley before serving warm.

Notes

Ensure carrots are of uniform size for even cooking. Adjust sweetness with honey according to taste.
