High Protein Ground Turkey Stuffed Sweet Potato

A nutritious and filling meal combining sweet potatoes and lean ground turkey, perfect for boosting protein intake.

  • 1 large sweet potato
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: Greek yogurt, chopped green onions, shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potato with a fork and bake for 40-45 minutes until tender.
  3. Heat olive oil in a skillet over medium heat and sauté chopped onion and minced garlic for 3-5 minutes until softened.
  4. Add ground turkey, paprika, salt, and pepper. Cook until browned and cooked through, about 6-8 minutes.
  5. Let the baked sweet potato cool, cut it in half lengthwise, and scoop out some flesh while leaving enough to hold its shape.
  6. Mix the scooped sweet potato flesh with the turkey mixture. Spoon it back into the sweet potato skins.
  7. Top with optional toppings if desired.
  8. Serve warm and enjoy!
