1 cup wild rice
2 tablespoons olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups vegetable broth
Salt & pepper to taste
1 teaspoon dried thyme
1 cup kale or spinach
Prep the wild rice: Rinse the wild rice under cold water. If soaked, drain and set aside.
Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add onions and cook until translucent (about 5 minutes). Stir in garlic, carrots, and celery, cooking until slightly tender.
Add the broth and rice: Pour in the vegetable broth, and bring it to a boil. Add the wild rice and thyme, reduce heat, and cover. Simmer for 45-50 minutes until the rice is tender.
Incorporate leafy greens: With about 5 minutes left of simmering, stir in the kale or spinach until wilted.
Season and serve: Taste and adjust the seasoning with salt and pepper as needed. Serve hot and enjoy!
