1 lb chicken sausage (sliced)
2 cups chicken broth
2 cups chopped mixed vegetables (carrots, bell peppers, zucchini)
1 can diced tomatoes
1 tsp Italian seasoning
Salt & pepper to taste
Prep Your Ingredients: Chop up all your vegetables and slice the chicken sausage. Having everything prepped will make the cooking process seamless.
Brown the Sausage: In a large pot over medium heat, add the sliced chicken sausage. Cook until browned, which should take about 5-7 minutes.
Add the Vegetables: Once the sausage is browned, add your mixed vegetables to the pot. Sauté them together for another 5 minutes until the vegetables begin to soften.
Incorporate the Broth: Pour in the chicken broth and diced tomatoes, ensuring to scrape any brown bits from the bottom of the pot.
Season the Soup: Stir in the Italian seasoning, salt, and pepper. Adjust according to your personal taste preferences.
Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes.
