Hearty Cheddar and Herb Soda Bread

A quick and easy soda bread infused with sharp cheddar cheese and fragrant herbs, perfect for cozy winter nights.

  • 4 cups All-Purpose Flour (or whole wheat flour for a denser texture)
  • 1 tsp Baking Soda
  • 1 tsp Salt (or ½ tsp for lower sodium)
  • ½ cup Fresh Chives
  • 1 tbsp Fresh Thyme
  • 1 tbsp Fresh Rosemary
  • 1 tbsp Fresh Sage
  • 1 cup Cheddar Cheese
  • 1½ cups Buttermilk

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together flour, baking soda, and salt.
  4. Finely chop fresh herbs and mix them into the dry ingredients.
  5. Grate cheddar cheese and fold it into the flour and herb mixture.
  6. In a separate bowl, prepare buttermilk or its substitute.
  7. Create a well in the dry mixture, pour in the buttermilk, and mix until a sticky dough forms.
  8. Flour your surface and knead the dough gently, shaping it into a round loaf.
  9. Transfer to the baking sheet and score the top with a shallow cross.
  10. Bake for 30 to 35 minutes until golden brown and sounds hollow when tapped.
  11. Cool on a wire rack for at least 10 minutes before slicing.
