Healthy Halloween Monster Pancakes

Fun and nutritious pancakes packed with spinach, perfect for Halloween breakfasts.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 cup fresh spinach, blended
  • 2 tablespoons melted butter or oil
  • Sliced bananas or berries for decoration
  • Chocolate chips or whipped cream for eyes

Instructions

  1. In a large bowl, mix the flour, baking powder, sugar, and salt.
  2. In another bowl, whisk together the milk, egg, and blended spinach.
  3. Combine the wet and dry ingredients until just mixed.
  4. Heat a non-stick skillet over medium heat and add a bit of oil or butter.
  5. Pour batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip to cook the other side.
  6. Serve with sliced bananas or berries for decoration and chocolate chips or whipped cream for the eyes.

Notes

Blend the spinach well to keep it smooth. Don’t overmix for fluffier pancakes. Consider food coloring for a festive look.
