  • 1 cup Greek yogurt
  • 1 cup pumpkin puree
  • ½ cup honey or maple syrup

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.
  • In a large bowl, whisk together the whole wheat flour, baking powder, ground cinnamon, and a pinch of salt.
  • In another bowl, combine the Greek yogurt, pumpkin puree, honey (or maple syrup), and eggs. Mix until smooth and well blended.
  • Slowly add the wet mixture to the dry ingredients, folding gently until just combined. Be careful not to overmix!
  • Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
