Healthy Greek Stuffed Peppers

A nutritious and delicious dish featuring bell peppers stuffed with a flavorful mixture of ground beef, chickpeas, and feta cheese, topped with creamy tzatziki sauce.

  • 4 large bell peppers
  • 1 cup cooked chickpeas
  • 1 pound ground beef
  • 1 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  4. Add chickpeas, garlic powder, onion powder, salt, and pepper to the skillet. Cook for another 5 minutes.
  5. Remove from heat and mix in feta cheese.
  6. Stuff each bell pepper with the beef and chickpea mixture.
  7. Place the stuffed peppers in a baking dish. Bake covered with foil for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes.
  9. Serve topped with tzatziki sauce and garnish with parsley if desired.

Notes

These stuffed peppers can be stored in an airtight container for 3-4 days in the refrigerator. They can also be frozen for up to 3 months.
