Healthy Greek Stuffed Peppers

A nutritious and delicious Mediterranean-inspired dish featuring vibrant bell peppers stuffed with a hearty filling of ground beef, chickpeas, and feta cheese.

  • 4 large bell peppers
  • 1 cup cooked chickpeas
  • 1 pound ground beef
  • 1 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat, add chopped onion and minced garlic, cooking until translucent (3-5 minutes).
  4. Add ground beef, oregano, salt, and pepper, cooking until browned.
  5. Stir in cooked chickpeas and half of the crumbled feta cheese.
  6. Fill each bell pepper with the meat and chickpea mixture.
  7. Place stuffed peppers in a baking dish and top with remaining feta cheese.
  8. Cover with foil and bake for 25-30 minutes.
  9. Remove foil and bake for an additional 10 minutes.
  10. Serve with a dollop of tzatziki sauce on top.

Notes

For added variety, consider using ground turkey or making a vegetarian version with quinoa and vegetables.
