1 lb boneless, skinless chicken breast
1 cup quinoa
4 cups chicken broth
2 carrots, diced
1 onion, chopped
2 cloves garlic, minced
1 bell pepper, chopped
1 teaspoon dried thyme
Salt and pepper to taste
Prepare the Chicken: Heat olive oil in a large pot over medium heat. Cook chicken breasts for 5–7 minutes on each side until fully cooked. Remove and let rest.
