Healthy Cabbage Soup

A delightful and nourishing soup packed with fresh vegetables and rich flavors, perfect for healthy meals year-round.

Ingredients

  • 1 medium head of cabbage, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Set your Instant Pot to sauté mode.
  2. Add olive oil, onions, and garlic; cook until fragrant and onions are translucent (2-3 minutes).
  3. Add carrots and cabbage; sauté together for about 5 minutes.
  4. Pour in vegetable broth and diced tomatoes; stir well.
  5. Add dried thyme, season with salt and pepper; stir to combine.
  6. Close the lid, set to high pressure, and cook for 10 minutes.
  7. Allow pressure to release naturally for 5 minutes, then quickly release the remaining pressure.
  8. Ladle soup into bowls and enjoy hot.

Notes

You can customize the vegetables or add proteins like chicken or beans for a heartier meal.
