Ground Turkey Taco Casserole

A delightful and nutritious casserole combining savory taco flavors with ground turkey, perfect for family dinners.

  • 1 Tbsp avocado oil (or olive oil)
  • 1 yellow onion (diced)
  • 1 lb ground turkey
  • 1 red bell pepper (chopped)
  • 4 cloves garlic (minced)
  • 3 Tbsp chili powder
  • 2 cups chicken broth
  • 1 cup salsa
  • ⅔ cup white rice
  • 1 (15-oz) can black beans, drained
  • 1 (7-oz) can green chilis
  • 1 tsp sea salt (to taste)
  • 3 cups grated colby jack cheese
  • 1 ripe avocado (sliced)
  • 3 stalks green onion (chopped)
  • ½ cup sour cream
  • ½ cup to 1 cup salsa

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a 13” x 9” casserole dish with cooking spray.
  3. In a large skillet, heat the avocado oil over medium-high heat and sauté the onion until soft.
  4. Add ground turkey, cooking until most of the pink is gone; season with sea salt.
  5. In the prepared baking dish, combine chopped bell pepper, garlic, chili powder, chicken broth, salsa, white rice, black beans, green chilis, and more sea salt. Stir well.
  6. Add the turkey and onion mixture and mix to ensure even distribution.
  7. Top with grated colby jack cheese.
  8. Cover with aluminum foil and bake for 45 minutes.
  9. Remove the foil and broil for an additional 5 to 8 minutes until cheese is bubbly and golden.
  10. Let rest for a few minutes before serving and top with avocado, sour cream, or other desired toppings.

Notes

This casserole is versatile; adjust seasonings to taste, and feel free to add more veggies or use different cheeses as desired.
