Ground Turkey and Sweet Potato Skillet

A delightful one-pan meal combining ground turkey, sweet potatoes, and black beans, rich in flavor and nutrition.

  • 1 lb ground turkey
  • 2 cups sweet potatoes, diced
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 tsp kosher salt
  • 1 tsp chipotle chili powder
  • 1 tsp cumin
  • 1 cup shredded cheddar cheese
  • 3 green onions, sliced
  • 1 medium tomato, diced
  • 1/3 cup sour cream or Greek yogurt
  • 1/3 cup salsa

Instructions

  1. Microwave the diced sweet potatoes for about 5 minutes.
  2. Mix the sour cream and salsa in a small bowl and set aside.
  3. In a large skillet, cook the ground turkey over medium-high heat for about 5 minutes, breaking it apart.
  4. Add the sweet potatoes, black beans, salt, chili powder, and cumin; cook for an additional 5 minutes.
  5. Sprinkle cheese on top and cover until melted.
  6. Garnish with green onions and tomatoes, serve with salsa and sour cream on the side.

Notes

For added flavor, consider using smoked paprika or cayenne pepper. This dish can easily be made vegetarian by substituting ground turkey with lentils.
