Ground Turkey and Bell Pepper Stir-Fry

A quick and delicious stir-fry featuring lean ground turkey and colorful bell peppers, perfect for a weeknight dinner.

  • 1 lb ground turkey
  • 2 bell peppers (red, yellow, or green)
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice or quinoa (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until the onion becomes translucent, about 3 to 5 minutes.
  3. Add the ground turkey to the skillet and cook until browned, about 5 to 7 minutes, breaking it apart as it cooks.
  4. Mix in the sliced bell peppers, soy sauce, salt, and pepper. Continue cooking until the bell peppers are tender-crisp, about 3 to 5 minutes.
  5. Serve the stir-fry over cooked rice or quinoa if desired.
