Ground Turkey and Peppers

A healthy and delicious meal made with lean ground turkey and colorful bell peppers that is quick to prepare and perfect for busy weeknights.

Ingredients

  • 1 pound ground turkey
  • 2 bell peppers (any color), chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Rice, lettuce wraps, or taco shells for serving

Instructions

  1. Heat a generous amount of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent and fragrant (3-5 minutes).
  3. Add the ground turkey and break it up; cook until browned (5-7 minutes).
  4. Stir in the chopped bell peppers, chili powder, cumin, salt, and pepper, mixing well.
  5. Cook for another 5-10 minutes until bell peppers are tender.
  6. Serve over rice, in lettuce wraps, or in taco shells, garnished with cheese or fresh herbs if desired.

Notes
