Grilled Chili Lime Chicken Fajita Salad

A refreshing and zesty salad featuring grilled chicken, fresh vegetables, and a tangy lime dressing, perfect for warm days.

Ingredients

  • 3 tablespoons olive oil
  • 100 ml freshly squeezed lime juice
  • 2 tablespoons cilantro, chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon brown sugar
  • ¾ teaspoon red chili flakes (adjust for spice preference)
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • 4 boneless chicken thigh fillets (skin removed)
  • ½ yellow bell pepper, deseeded and sliced
  • ½ red bell pepper, deseeded and sliced
  • ½ onion, sliced
  • 5 cups romaine lettuce, washed and dried
  • 2 avocados, sliced
  • Extra cilantro for garnish
  • Optional: Sour cream to serve

Instructions

  1. In a medium-sized bowl, combine olive oil, lime juice, cilantro, garlic, brown sugar, red chili flakes, cumin, and salt. Whisk until blended.
  2. Place the chicken thighs in a resealable bag or shallow dish, pour marinade over, seal, and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high. Remove chicken from marinade and grill for 6-7 minutes on each side until cooked through.
  4. While chicken rests, toss bell peppers and onion in olive oil, season with salt, and grill for 4-5 minutes.
  5. In a large bowl, place romaine lettuce, top with sliced chicken, grilled vegetables, avocados, and garnish with cilantro. Serve with sour cream if desired.

Notes

Keep components separate if storing leftovers to prevent wilting.
