Greek Turkey Soup

A warm and comforting soup made from Thanksgiving turkey leftovers, blended with fresh herbs and lemon juice for a vibrant flavor.

  • Thanksgiving turkey leftovers
  • 1 cup lemon juice
  • 1 cup rice
  • Fresh herbs (such as dill and parsley)
  • Salt and pepper to taste
  • 4 cups chicken or turkey broth
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Prepare Your Ingredients: Gather all ingredients, shredding or chopping turkey and chopping onion and mincing garlic.
  2. Sauté Onion and Garlic: Heat oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent, about 3-5 minutes.
  3. Add Turkey and Broth: Add turkey leftovers and broth to the pot, stir and bring to a gentle simmer.
  4. Cook the Rice: Add rice, stir in, and simmer for about 15 minutes until rice is tender.
  5. Mix in Lemon Juice and Herbs: Stir in lemon juice and fresh herbs for added freshness.
  6. Season to Taste: Season with salt and pepper, stirring well.
  7. Serve Warm: Ladle the soup into bowls and serve warm.

Notes

For a flavorful touch, serve with crusty bread or a fresh salad. Garnish with extra herbs or olive oil if desired.
