Golden Tomato Fritters

Crispy and flavorful fritters made with ripe tomatoes, perfect as an appetizer, side dish, or light main course.

  • 2 cups ripe tomatoes, chopped
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 2 large eggs
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine the chopped tomatoes, cornmeal, all-purpose flour, baking powder, salt, and black pepper. Mix well.
  2. Add the chopped green onions and fresh cilantro to the bowl and stir gently to incorporate.
  3. Beat the eggs in a separate bowl, then pour into the tomato mixture and stir until combined.
  4. Heat enough oil in a frying pan over medium heat until it shimmers.
  5. Drop spoonfuls of the fritter mixture into the hot oil and fry until golden brown on both sides, about 3-4 minutes per side.
  6. Use a slotted spoon to remove the fritters and let them drain on paper towels.
  7. Serve warm for the best flavor and texture.

Notes

Serve with dipping sauce, crumbled over salads, or with yogurt for a refreshing twist.
