In a large bowl, mix flour and salt. Create a well, add yeast mixture, olive oil, garlic, and herbs; mix until a dough forms.
Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
Place dough in a greased bowl, cover with a damp cloth, and let rise for 1-2 hours until doubled in size.
Punch down dough, divide into three portions, and roll each into a long rope. Braid the ropes together.
Place braided loaf on a parchment-lined baking sheet, cover with a damp cloth, and let rise for another 30-45 minutes while preheating the oven to 375°F (190°C).
Brush the top with melted butter, bake for 25-30 minutes until golden brown.
Cool on a wire rack, slice, and enjoy warm or at room temperature.
