1 bag coleslaw mix
1 can black beans (rinsed and drained)
1 can canned corn (drained)
1 medium jalapeño pepper (diced, adjust for spice)
1 medium red bell pepper (diced)
3 stalks green onions (sliced)
1/4 cup fresh cilantro (chopped)
1 packet taco seasoning
1 teaspoon ground cumin
2 cups Chili Cheese Fritos (reserve some for topping)
Instructions
Wash all fresh produce and dice the jalapeño and red bell pepper. Slice the green onions and chop the cilantro.
In a large mixing bowl, add the coleslaw mix, rinsed black beans, drained corn, diced jalapeño, diced red bell pepper, sliced green onions, and chopped cilantro.
Sprinkle the taco seasoning and ground cumin over the mixture, then toss everything together until well combined.
Gently fold in the Chili Cheese Fritos, being careful not to crumble them too much.
Serve immediately or chill in the fridge for about 30 minutes for better flavor integration.
