Easy Zuppa Toscana Soup

A comforting and creamy Italian soup made with Italian sausage, potatoes, and kale, perfect for family dinners and gatherings.

Ingredients

  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, thinly sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the Italian sausage in a large pot over medium heat until browned and no longer pink, about 5-7 minutes. Remove and set aside, retaining some drippings.
  2. Add the chopped onion to the pot and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
  3. Pour in the chicken broth and bring to a boil. Add the sliced potatoes, reduce to a simmer, cover, and cook until fork-tender, about 10-12 minutes.
  4. Return the cooked sausage to the pot, add the chopped kale, and stir to combine. Simmer for another 5 minutes.
  5. Stir in the heavy cream and optional crushed red pepper flakes, season with salt and pepper, and heat through for another 2-3 minutes.

Notes

Serve hot with crusty bread or a side salad. For a lighter version, use turkey sausage or substitute kale with spinach.
