1 pound Italian sausage
1 large onion, chopped
3 cloves garlic, minced
4 cups chicken broth
4 medium potatoes, thinly sliced
2 cups kale, chopped
1 cup heavy cream
1/4 teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
Instructions
Cook the Italian sausage in a large pot over medium heat until browned and no longer pink, about 5-7 minutes. Remove and set aside, retaining some drippings.
Add the chopped onion to the pot and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
Pour in the chicken broth and bring to a boil. Add the sliced potatoes, reduce to a simmer, cover, and cook until fork-tender, about 10-12 minutes.
Return the cooked sausage to the pot, add the chopped kale, and stir to combine. Simmer for another 5 minutes.
Stir in the heavy cream and optional crushed red pepper flakes, season with salt and pepper, and heat through for another 2-3 minutes.
Notes
Serve hot with crusty bread or a side salad. For a lighter version, use turkey sausage or substitute kale with spinach.
