1 lb lean ground beef or turkey
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 can (15 oz) corn, drained
1 can (15 oz) tomato sauce
1 cup beef or chicken broth
1 packet taco seasoning
1 cup water
Brown the Meat: In a large pot over medium heat, brown the ground beef or turkey until fully cooked, breaking it into small pieces as it cooks. Drain excess fat if necessary.
Add Ingredients: Stir in the canned black beans, diced tomatoes, corn, tomato sauce, taco seasoning, and broth. Add in the water and stir until well combined.
Simmer: Allow the soup to come to a boil, then reduce heat to low. Let it simmer for about 20 minutes to allow the flavors to meld together.
Taste Test: Give it a taste and adjust the seasoning as needed. You can add salt, pepper, or additional spices to heighten the flavor.
Serve: Once the soup is done, ladle it into bowls and serve with your choice of toppings like cheese, sour cream, chopped cilantro, or tortilla chips.
