Easy Spinach and Feta Patties

Quick and healthy spinach and feta patties, perfect as a snack, side dish, or light meal. Enjoy fresh or make ahead for easy meal prep.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing)
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet.
  2. In a large mixing bowl, combine all ingredients until well combined.
  3. Shape the mixture into small patties and place on the baking sheet.
  4. Brush the tops of the patties with olive oil.
  5. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. Allow to cool slightly, then serve warm with dipping sauces.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat in the oven or air fryer.
