1 cup pumpkin puree
1 cup brown sugar
½ cup butter, softened
1 cup all-purpose flour
2 tsp pumpkin pie spice
1 cup mini marshmallows
1 cup chocolate chips
Preheat your oven to 350°F (175°C). This ensures your cookies bake evenly.
Prepare your baking sheet by lining it with parchment paper for easy cleanup.
In a large bowl, mix the softened butter, pumpkin puree, and brown sugar until creamy.
Gradually mix in the flour and pumpkin pie spice, stirring until just combined.
Carefully add the mini marshmallows and chocolate chips, making sure they’re evenly distributed.
Use a cookie scoop to place dollops of dough on the prepared baking sheet, spacing them about two inches apart.
Place in the preheated oven and bake for 10-12 minutes until the edges are lightly golden. Remember they will firm up as they cool.
Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
