1 box of yellow cake mix
½ cup unsalted butter, melted
1 large egg
1 package (8 oz) cream cheese, softened
2 cups pumpkin puree
2 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
Preheat your oven: Set your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
Prepare the crust: In a mixing bowl, combine the yellow cake mix, melted butter, and egg. Stir until well combined, and momentarily set aside.
Form the crust: Press the dough mixture into the bottom of the prepared baking pan evenly and bake for about 10 minutes or until lightly golden.
Make the filling: In another bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice, then beat until the mixture is creamy and well blended.
Pour the filling: Carefully pour the filling onto the pre-baked crust, spreading it evenly with a spatula.
Bake the cake: Bake for an additional 40-45 minutes. The edges should be set, but the center will still be soft.
Cool and serve: Allow the cake to cool in the pan before slicing. Dust with powdered sugar before serving, if desired.
