Preheat your oven to 350°F (175°C) and line a 12-cup muffin tray with cupcake liners.
In a large mixing bowl, blend together the pumpkin puree, sugar, and vegetable oil until well combined.
Add in the eggs one at a time, continuing to mix until the batter is smooth.
In another bowl, sift together the flour, baking powder, salt, cinnamon, and any other spices you may choose to add.
Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix.
Using a spoon or scoop, fill the muffin cups about ¾ full, allowing room for rising.
Bake in the preheated oven for 20–25 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean when the cupcakes are ready.
Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Top with your favorite frosting once cooled and enjoy the deliciousness!
