  • Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  • Prepare the Crust: If using a homemade crust, roll it out and cut into small circles to fit your mini pie pan. Press the dough into the molds and place them in the fridge to chill while preparing the filling.
  • Mix the Filling: In a large bowl, whisk together the pumpkin puree, brown sugar, eggs, cinnamon, ginger, salt, and any additional spices you desire. Make sure there are no lumps; a smooth mix results in a creamier pie.
  • Fill the Crusts: Remove the crusts from the fridge and fill each one with the pumpkin mixture, leaving some space at the top for expansion during baking.
  • Bake: Place the mini pies in the preheated oven and bake for about 20-25 minutes. Watch for a slight jiggle in the center; they’ll continue to set as they cool.
