Easy Jack-O-Lantern Pancakes

Fun and colorful pancakes perfect for Halloween breakfast.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Orange food coloring
  • Chocolate chips or whipped cream for decoration

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  4. Add a few drops of orange food coloring until you get the desired color.
  5. Heat a non-stick skillet over medium heat. Lightly grease it with butter or oil.
  6. Pour about ¼ cup of pancake batter into the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancake and cook for another 1-2 minutes until golden brown.
  8. Repeat with the remaining batter.
  9. Use chocolate chips or whipped cream to create jack-o-lantern faces on the pancakes.

Notes

If you have leftover pancakes, let them cool down. Store in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Consider using pumpkin puree for natural color and flavor.
